My Journey

My fascination with fermentation began in the rolling hills of Ontario, where I first discovered that every pour is a conversation between heritage and science. What started as a personal curiosity grew into a professional obsession, leading me through rigorous international certifications and thousands of curated tasting sessions.

Earning my WSET qualifications in wine, and BJCP and Prud'Homme credentials in Beer taught me that technical excellence is only the foundation. I realized that the true magic happens when that expertise serves to elevate the experience of others. I founded Beer and Wine Tom to bring high-end sensory education to everyone from curious beginners to seasoned industry professionals.  I also aim to help breweries and wineries to get the most out of thier products, and set them up for success in these trying economic times.

The Philosophy

I believe tasting is an act of presence. By learning to notice the subtle profiles in every batch, we do more than just drink better—we connect with the passion and craftsmanship of the makers behind the label.  With my "Mindful Tasting" approach, you will learn to appreciate the beer and wine you are consuming so much more.
